PORTSMOUTH, Va. (WAVY) – Caroline Fornshell, Registered Dietician, Nutritionist and Founder of LWell Longevity, Wellness and Fitness was in the kitchen on The Hampton Roads Show. She showed us how to make a healthy, quick and delicious quiche the whole family will love. Caroline also talked about the benefits of a strategic, balanced diet as well as anti-inflammatory eating. She announced the creation of a web based membership to LWell along with why it is important to work with someone, not just for information, but for accountability and success.

Ingredients

1 sweet potato (thinly sliced)
7 eggs
Fresh dill
Ground pepper
4 oz Smoked salmon (sliced)
1 cup Greek yogurt
2 handfuls Spinach
1 tablespoon minced garlic
Cheese or cheese substitute
Hemp hulls
Chia seeds
1 tablespoon EVOO
1-2 scoops of protein powder

Instructions

Smear a few drops of EVOO on a pie pan
Layer thin slices of sweet potato
Spritz remaining EVOO on top of slices sweet potato
In blender, combine eggs, yogurt, EVOO, protein powder, pepper and garlic.
Add spinach and dill and give another quick zap in the blender. The spinach should be recognizable rather then pulverized.
Pour the egg mixture on top of the sweet potatoes.
Layer in sliced salmon
Layer on top with cheese or substitute as well as hemp hulls and chia seeds
Bake at 375* for about 45 minutes or until cooked through
